Recently cattle have gotten a bad reputation as being huge methane producers that destroy natural habitats and are a major contributor to global warming. Nothing could be further from the truth. Before there were cattle, bison in the millions used to range all over the West. The fertile soil we enjoy in the Midwest is actually a result of all the bison poop that was deposited over centuries, covering up rock, creating fertile ground for trees, plants and grasses to flourish in. Bison were naturally free ranging with the herds being regularly moved from place to place due to the action of predators like wolves. This symbiotic relationship prevented overgrazing. Conventional farming practices which call for tilling the soil have resulted in the rapid erosion the marvelous topsoil that took thousands of years to accumulate.
Beef from cattle that have only ever consumed grass has a wonderful fatty acid profile that prevents heart disease. In addition cattle do a wonderful job of assimilating vitamins and minerals from vegitation due to having multple stomachs that allow them to extract these nutrients in a natural fermentation process. We humans with our single stomach and short small intestines could eat pounds and pounds of vegetables and still not be able to extract the nutrients that cattle do so efficiently. We honor and respect our cows. Yes, they live shorter lives than they would if they were not being raised for beef, but then again, many fewer would be able to enjoy a life here on planet earth if the population wasn't being kept in check.
